Edgewood Cheddar

Smooth, savory, cloth-bound. 

Clothbound cheddar is wrapped in cotton cloth before being aged in a cool, humidity-controlled environment. We will offer a 3-6 month-old cheddar (Mild), and a 12-month cheddar (Sharp). 

Clothbinding is the traditional English method of making cheddar. It allows the cheese to interact with the air around it and it arrives at a far more sophisticated flavor than the conventional method which is to suffocate the aging cheese in plastic.


Milk: Pasteurized cow's milk 
Rennet: Vegetable Rennet
Age: 3+ months
